souari nut, any of the seeds borne in large, clustered fruits of trees of the genus Caryocar (family Caryocaraceae), which has about 15 species. C. nuciferum, from Panama and northern South America, is typical. Its coconut-sized fruit has four nuts, surrounded by edible flesh. The warty, red, hard-shelled, kidney-shaped nuts have a rich flavour and contain a fatty oil that is extracted and used in cooking.
